What counts as a tip for food preparation workers

Card and cash tips, and your share of a tip pool or tip-out, count. An automatic service charge (for example 18% for large parties) does not, unless the customer can remove or change it. Back-of-house roles on this list, like cooks and dishwashers, qualify for tips they receive through a pool.
